How to make your own Indian Chai

This is the drink of yogis. It is served in the morning and in the afternoon. It acts as a natural digestive, it is energising, antiseptic and helps concentration.
1¾ pints (1 litre) water
2 cloves, crushed
½ cinnamon stick
1–2 cardamom pods, opened
1–2 teaspoons sugar per person
3–4 level tablespoons black tea leaves

Method: In a saucepan boil the water with the spices. When the water has boiled, turn off the heat and add the tea. Cover the saucepan and leave for precisely 3 minutes, just enough time for the mixture to get flavour and colour. Strain and serve.
