Lizi’s Low Sugar Granola Olympian Salad

Not only is this salad stuffed to the brim with super-foods, it’s also the perfect summer salad to accompany this year’s Olympics! We haven’t forgotten a good splash of that Brazilian staple, zesty lime, to give a healthy meal a little more pizzazz whilst Lizi’s GL tested granola will keep you feeling fuller for longer.
Whether you’re a gym bunny, athlete in training or simply just ready to get fit this summer, this salad is packed full of goodness, summery colours and punchy flavours that prove that healthy eating doesn’t have to be just lettuce and tomatoes.

Lizi’s Low Sugar Granola Olympian Salad

Serves: 4 as a large side

Ingredients:

• 2 little gem lettuces
• 4 small cooked beetroot, cut into chunks
• 2 avocados
• 2 handfuls of Lizi’s Low Sugar Granola

Dressing:

• Juice of 2 limes
• Half a clove of garlic, grated
• 2cm of ginger, grated
• 1 tsp soya sauce
• 1 tsp honey
• 270 ml sesame oil

Method: 

Put the lime juice in a jam jar along with the rest of the dressing ingredients. Put the lid on and give it a shake like you’re dancing at Carnival!

Slice the bottom off the little gem lettuces and separate the leaves into a large flat-bottomed dish. Chop the beetroot into small chunks and add to the lettuce.

Peel the avocados just before serving, and chop lengthways into 8.

Place in the bowl and add the vinaigrette once it’s been really shaken. Get those arms moving! Toss the salad and then scatter the granola over the top.
